Nigerian Shish Kebab.

Suya is one of the most cherished local delicacies in Nigeria. 

Restaurants in Lagos sell local food, grilled plantain with ground nuts, fish and more. In all of their forms, no local food is as popular as suya, very similar to shish kebab.

Suya is generally made with skewered beef, ram, or chicken. Innards such as kidney, liver and tripe are also used. 

Suya is spiced with peanut cake, salt, vegetable oil and other flavorings, and then barbecued. 

Suya is garnished with tomatoes, cabbage and sliced onions.

Unlike grilled suya common in other part of Nigeria, Suya is mostly dried in the northern part of Nigeria to form kilishi meat. In Abuja, kilishi is prepared with mixed spices. Kilishi can also be taken alone as a snack, or with a cup of ice cold soaked garri.
